I love to eat cassava cake, Vietnamese way of cooking, of course. Not only it’s fairly easy to make, it’s cheap, fast and delicious. I bought a bag of frozen shredded cassava awhile ago and now it looks kind of dry, I better do some with it before it’s too late. Well, I haven’t made my favorite cassava cake lately therefore that’s what I will do. Ingredients:

1 lb bag of fresh frozen shredded cassava 1/2 cup sugar (if you want sweeter, then add more to your taste) 1/2 cup coconut cream 2 tsp vanilla pinch of salt

Preheat the oven at 350 degree F. Combine all ingredients above and use 8 inch round mold to bake for 1 hour. Done. Bon appetite.

Easy and delicious Banh Tam Khoai Mi - Steamed Cassava with Coconut aka Silkworm Cassava Cake.

  1. Igredients are written in English and Vietnamese.
  2. Nguyên liệu được viết bằng Tiếng Việt và Tiếng Anh.
  1. 2 lbs grated frozen cassava (1 lb per package)
  2. 1/2 tsp kosher salt
  3. 1 cup coconut cream. If you like your cake taste more chewy then use 3/4 cup instead.
  4. 145 gr sugar = 1/2 cup + 1 1/2 Tbsp
  5. 45 gr = 5 Tbsp tapioca starch
  6. 1 tub vanilla sugar
  7. 1/4 tsp pandan extract
  8. 3-4 drops red food coloring
  9. Little bit of vegetable oil for greasing the pan.
  10. 1 bag (16 oz) frozen grated coconut. Mix with 1/2 tsp kosher salt. Steam for 15 mins.
  11. Thaw frozen cassava, coconut in cold water for 1 hour and 30 mins.

  3. 1 cup nước cốt dừa (coconut cream). Nếu các bạn thích ăn bánh dai hơn thì chỉ dùng 3/4 cup thôi.

Bánh khoai mì is a Vietnamese cake made from grated cassava, sugar, coconut milk, and a small amount of salt.

There are two varieties:

  • Bánh khoai mì nướng - baked
  • Bánh khoai mì hấp - steamed (much less common)

A similar cake made from taro is called bánh khoai môn.

Bánh khoai mì is similar to the cassava cake of the Philippines. The Filipino dish, however, differs in its top layer, which is traditionally custard, and in its use of milk as an ingredient.
